Sensient Flavours Develops Low-Calorie Ingredients for Ice Cream Manufacturers

UK-based food ingredients manufacturer Sensient Flavours has developed low-fat and reduced-sugar ingredients to be used in the ice cream segment in order to cater to the increasing number of health-conscious consumers.

The company's latest developments include APSS (All-Purpose Sweet Solutions) and DairyBoost, two low-calorie range of ingredients for ice cream manufacturers, reported agra-net.com.

The company stated that it has observed increasing number of consumers moving away from certain ingredients such as artificial flavors and colors, preservatives, additives and heavily processed ingredients, which is leading to demand for naturally sourced and organic ingredients.

Sensient Flavors European marketing director Simon Daw was quoted by Food Ingredients First as saying: "Ice cream is an indulgent category and will never be as healthy food as fruit and vegetables. However using our technology and solutions we are able to provide healthier options - the added bonus is that the brand and products do not compromise the required 'taste of indulgence'. We are able to maintain flavor profiles and therefore maintain an 'indulgence' positioning."

APSS and DairyBoost can be used as single solutions to reduce sugar or fat or in combination to reduce both. These ingredients help significant reduction in calories without affecting the flavour of traditional ice cream, the company claims. The ingredients can also be customized to meet customer-specific needs, the publication reported.

The two ingredients ranges are based on botanical extracts that are extracted using advanced technology to match the sensory characteristics of the raw materials. When combined with Sensient's flavor technology and application expertise, distinctive taste profiles are developed, reported Food Ingredients First.
