Iceland has launched new lines of fish and seafood following launch of first premium fish range earlier this year.

In-store and online now, the sumptuous new lines are frozen within hours of being caught and, in some cases, are even frozen whilst still at sea, resulting in fish that is at the peak of its freshness. .

The frozen food specialist uses smart fishing and freezing systems to allow customers to enjoy all kinds of delicious and nutritious fish at any time of the year, and savour flavours which taste as fresh as if they were buying off the boat.

Nigel Broadhurst, Iceland Joint Managing Director says, "So-called 'fresh' fish can take well over a week to reach the shop counter after being caught and what you often buy has been frozen and defrosted before it's put on display. This time lapse can affect flavour and nutrients may deteriorate."

Here are details of the exciting new fish offerings now available in most Iceland stores and online at www.iceland.co.uk:

Whole Fresh Frozen Dover Sole (380g/£8) are caught in the North Sea prepared and frozen within hours. These highly prised fish are responsibly sourced protecting the surrounding marine ecosystem. This flavourful species is firm but delicate with a meaty texture. The fish has been expertly prepared ready to cook in a variety of ways including grilling and pan frying, but for the best results simply oven bake with a touch of butter and lemon juice, perfect for those with mid-week time pressured evenings.

Red Snapper Fillets (4pk/500g/£5) are responsibly line caught on day boats in the warm waters of the Pacific Ocean. This attractive filleted Red Snapper has a distinctive red skin that makes it ideal for BBQs, pan frying and grilling. The flesh is firm, slightly off white with a good flavour making it the perfect partner for combing with bold Asian flavours.

Squid Tubes (400g/£1.35) specially selected sweet and succulent Squid Tubes. They are carefully handled and quick frozen within hours, ensuring the best quality of product is served at the table. This squid is a great sustainable fish that has been prepared and cleaned making it is easy to cook in seconds. Squid flesh is almost pure muscle, with very little fat and cooked in little to no time it produces a marvellous silky texture suitable for paellas or simply grilling on a high heat with lemon, garlic and coriander.

2 Part Prepared Sea Bass (2pk/500g/£5) responsibly farmed in the pristine waters of the Aegean Sea creating a truly exciting premium product. The catch is then gutted and scaled before being individually quick frozen to lock in the quality and flavour, whilst ensuring it is quick and easy to cook. Sea bass has grown in popularity in the UK over recent years with chefs and home cooks alike praising the versatility of the firm white fish. In addition to the juicy texture of the flesh, its attractive silver skin which cooks and crisps beautifully, looks striking on the plate. This fish can be cooked in a number of different ways using a variety of great flavours, but to truly appreciate the quality of Sea Bass simply bake in the oven with aromatic herbs.

Cod Loins (5pk/1kg/£10) are responsibly sourced and caught in MSC certified fishing areas, the catch is then skinned, boned and frozen within hours of being caught preserving the quality of the fish. Cod Loins are considered the prime cut from the larger cod fillet, taken from the middle section of the fillet, making them perfect for individually sized portions. Still the nation's favourite fish the flesh is firm to the touch and pearly white in colour. A versatile and robust fish, these loins can be roasted, battered, pan-fried, poached, grilled or steamed. The dense flesh when cooked is delicately flaky and holds its shape well so the loins are also great for putting in fish stews and pies.
