DSM has modified its Delvo Fresh range of quark cultures to meet the customer demands for smoother, creamier quark with a subtle flavour.
Apart from contributing to healthy, protein-rich diets, the quark cultures makes production faster and more efficient, the company said.
According to DSM, the increasing demand for sugar-free, high protein snacks by health-conscious consumers has given rise to interest for quark, even outside the conventional markets of Eastern & Northern Europe.
The characteristic features of quark are believed to be well-suited for consumers prefering to have natural, healthier dairy products with hunger satiating properties.
Delvo range of quark cultures aid in reducing fermentation time and yield improvement as compared to other cultures in the market, the company claims.
DSM's product includes customized solutions which enable producers to differentiate on flavor, taste and/or texture, from a mild, natural quark to a more 'on-the-go' quark mixed with a yogurt product.
