Food ingredients company Corbion Caravan has launched a new emulsifier solution which claims to remove partially hydrogenated oils (PHOs).

The new line named Ensemble is intended to provide drop-in ease, volume and increased tenderness to foods.

Corbion Caravan global product manager for emulsifiers Jim Robertson said:"Corbion Caravan set the standard for hydrated monoglycerides over 50 years ago. Now, we've built on our deep technological understanding and processing knowledge to develop a drop-in replacement that produces even better results."

The company conducted application tests with no-time dough applications. Through the tests, the company claims to have found that the new GMS 520 and GMS 540 non-PHO hydrated emulsifiers improved tenderness and volume while improving crumb grain and other features.

GMS 520 is a 1:1 solution, while GMS 540 helps customers minimize usage, thus creating a window of potential cost savings through the entire process from purchasing to packaging.

Jim Robertson said: "Customers can reduce their usage rate up to 20% with GMS 540, and still obtain improvements in dough handling, volume, softness, crumb grain and more."

Corbion Caravan is working on removing PHO products from its portfolio by early 2017. The US Food and Drug Administration (FDA) mandate deadline for the elimination is June 2018.

Recently, the company expanded its Function Plus product line with Function Plus 250W, which was developed to replace 30% egg whites in angel food cakes. Sweet baked goods manager Kathy Sargent had said: "Function Plus 250W allows Corbion Caravan customers to sharply reduce the amount of egg whites used in chemically leavened angel food cake formulas, while maintaining the taste and consistency that defines a slice of delicious angel food cake."

"Customers can use it to replace either powdered or liquid egg whites, and no special equipment is required. It's a drop-in replacement that helps our customers cope with today's high prices."
