Jason Girard Is Raising Funds to Open Old Dunbar Distillery for Bourbon Production

Jason Girard is raising funds to open Old Dunbar Distillery for bourbon production in the US state of Kentucky.

The funds will be used in the purchase of equipment required for the distillery which includes a handmade copper still, The Spirits Business reported.

Girard was quoted by the website as saying: "We realise that it takes a long time to produce and age Kentucky straight Bourbon whiskey.

"We understand that the process is a labour of love and it takes several years of barrel ageing to do it right.

"Our first priority is to make memorable whiskey that is true to its heritage and worthy of the top shelf."

The Old Dunbar Distillery is expected to be opened in September 2015.

Earlier this month, Boundary Oak Distillery in Hardin County has started producing bourbon after receiving a federal permit to start distilling.
