Davisco, the dairy business unit of Agropur, has ramped up production capacity and expanded its BioZate product line with the addition of heat-stable and clean-flavored hydrolyzed whey proteins.
The company claims that BioZate whey proteins are manufactured using a proprietary process, and the expansion has enabled the production of significant volumes.
Processed to over 90% purity, Davisco hydrolysates can be used in a wide variety of food and nutrition products such as beverages and snack foods.
According to the company, the heat-stable BioZate3 is suitable for nutrition applications with its high digestibility, while BioZate7 is a new clean-flavored protein and avoids bitter notes often associated with hydrolyzed protein.
BioZate proteins can be incorporated into bars, and into sheeted or extruded snacks without introducing firm textures, due to which bars remain softer over shelf life, sheeted doughs maintain their elasticity during processing and extruded snacks maintain their puffing capacity.
Davisco Technology director Craig Sherwin said: "BioZate7 is the most recent in a generation of specialty whey protein ingredients that reflects our expertise in high purity, high quality proteins.
"Davisco is committed to meeting the needs of customers through sound science, and this hydrolyzed whey protein uses the latest in natural enzymes to achieve remarkable new properties."
