Glanbia Nutritionals Unveiled a New Flaxseed Ingredient

Glanbia Nutritionals has unveiled a new flaxseed ingredient, OptiSol 3000, which can be used to replace eggs in the preparation of baked foods.

Glanbia stated that the new ingredient is a cost-effective alternative to eggs, and it is suitable for applications such as cakes, muffins, pancakes, sweet bakery mixes, baked bars, eggs rolls, wantons, and refrigerated cookie dough.

OptiSol 3000 can be used in a 1:1 inclusion rate for dried whole eggs. The manufacturers can list the ingredient as flaxseed meal and whey protein concentrate on the product labels. It is certified Kosher, GMO-free and gluten-free and is low in cholesterol, Glanbia claims.

Research on muffins containing OptiSol 3000 have shown the moist texture similar to muffins containing dried egg yolks. In addition, Glanbia Nutritionals' Texture Analyzer showed no significant variations in texture between OptiSol 3000 and dried egg yolks.

Glanbia Nutritionals, a division of Ireland-based nutritional solutions and cheese group Glanbia, manufactures and sells nutritional and functional ingredients to the food, beverage, supplement and animal nutrition industries.
