Lycored Develops Ingredients to Give Natural Color to Food and Beverages

Carotenoids provider Lycored has developed ingredients that give red, orange and yellow colors naturally, allowing food and beverage manufactures to give up artificial ingredients.

The two new certified Kosher and Halal natural ingredients include Tomat-O-Red and Lyc-O-Beta, which are available in liquid formats.

These non-GMO, vegetarian colorings are said to be heat, light and pH stable.

Lycored's Tomat-O-Red is created using tomato-derived lycopene and is claimed to offer a more technically sound red colouring alternative to unstable beetroot and anthocyanins, as well as carmine, which is not vegetarian-friendly.

This color can be used in fruit preparations, dairy products, confectionery, meat, baked goods and beverages.

The Lyc-O-Beta is sourced from Blakeslea trispora, a beta-carotene-rich, allergen-free natural fungus cultivated by Lycored.

To be used in bakery, fillings, confectionery, dairy and beverages, Lyc-O-Beta gives a spectrum of yellow to orange shades.

Both of these ingredients are stable in pasteurisation and most UHT processes, making them ideal for dairy products.
