Archer Daniels Midland (ADM) has launched a new sodium reduction technology, which can be used in meat products.
The company claims that its new technology could cut sodium content by 30%, without affecting the salty flavour in meat products.
ADM's SaltTrimR product category offers several solutions including Sea SaltTrimR that have been developed to lower sodium levels in meat applications by up to 30%, Foodbev reported.
As the name suggests, Sea SaltTrimR is based on sea salt and is claimed to be rich in potassium chloride and other minerals, the company said.
When combined with ADM's natural flavourings, Sea SaltTrimR brings salty flavour while eliminating the bitter taste which is usually linked with potassium.
Through its Salt Enhancer, the company is offering a natural flavouring to be used for foods that need to go with low sodium levels. ADM claims that the ingredient helps eliminate up to 30% sodium from product formulation without leaving an impact on the salty taste or mouthfeel, reported Foodbev.com.
Salt Enhancer comes in a dry powder form and can be easily combined with other dry ingredients.
It can be used in several food applications such as cured meat pieces, fresh processed meat, precooked products, dry and raw meat.
SaltTrim products and Salt Enhancer are claimed to be halal and kosher certified.
ADM sales director EMEA Tim Symons was quoted by Foodbev.com as saying: "Our sodium reduction solutions will allow the end-customer to adopt a healthier lifestyle without sacrificing the salty taste and mouthfeel that they are used to. Our goal is to help meat product manufacturers achieve local and international salt reduction targets and provide a variety of reduced-sodium meat applications using the latest technology to satisfy market demands."
