Le Gavroche Has Added Another Beer to The List of Its Offerings- Roux Brew 2015

London-based restaurant Le Gavroche has added another beer to the list of its offerings- Roux Brew 2015, which is brewed by South East London’s Fourpure Brewing Company.

Roux Brew 2015 is dry and refreshing, aromatically citrusy, with additional spicy notes of black pepper.

Le Gavroche owner Michel Roux Jr said: "I'm very excited about Roux Brew 2015. The guys at Fourpure Brewing Company did a fantastic job with our first Roux Brew, I was incredibly keen for us to work together again. Diners and beer lovers at our restaurants have loved our creation, and I know they will be excited to hear that we have something brand new to look forward to, coming into the new season."

Head brewer John Driebergen said: "We're going for a very traditional approach here to yield a 5.6% beer that's very refreshing and very dry, but also flavourful and interesting enough to stand up to a wide variety of foods.

"Gold coloured and clear in appearance with a dense, rocky, white head of foam. A combination of citrus and pepper on the nose and more of the same on the pallet, with a soft malt character and a pleasantly dry finish. The beer is inspired by the seasonal summer farmhouse beers of Northern France and Southern Belgium, making it great for pairing with rustic dishes and funky cheeses, or excellent on its own."

Like with all items on Le Gavroche's menu, quality is very important. Michel Roux Jr's two Michelin star restaurant was one of the first quality restaurants to establish a beer list that now extends to 17choices. Keen to expand the choice, Michel along with Head Sommelier, David Galetti and Fourpure Brewing Company, have sourced an interesting French farmhouse yeast strain to create a dry and refreshing beer.

While being light and flavourful, Michel wanted to retain some structure and texture to the beer so Fourpure have combined a carefully selected blend of world class malted barley and wheat from the UK.

Blending Lager Malt to create the light colour and soft flavour; Vienna Malt which is a light coloured malt that contributes a gentle maltiness resembling the flavour of toasted brioche; and some Wheat Malt that will contribute some protein to ensure a nice frothy head and add some textural complexity.

John further added: "The goal is to provide just enough bitterness for the beer to be refreshing, and just enough hop character to compliment the fermentation flavours and aromas, but no more."

To do this, Fourpure will hop the beer with a German variety called Saphir, which is renowned for its refined aroma and mild flavour, a pleasant spiciness combined with a distinct tangerine-like characterthat will complement the yeast nicely.

Roux Brew is now being served at Le Gavroche and all other participating Roux restaurants.
