US-based Caravan Ingredients has developed a new enzyme technology which can help cracker manufacturing firms to increase throughput and lower wastage.
According to the company,the Cracker Vantage solution gives a batch of dough a window of tolerance,enabling it to be still usable after several hours of downtime.This can help the companies to lower waste.
In addition,the technology gives crackers a greater resistance to chipping,which again reduces the waste,reported Foodnavigator.com.
The company noted that during initial trials,one customer had an average throughput rate of 82%and increased this to 98%by using the company's solution.
While cost savings from the use of Cracker Vantage solution could be proven,it varies from processor to processor based on the size of batches,existing waste levels,downtime rates and current cracker formulation,the company said.
