Lake Blue Will Employ Enwave's REV Dehydration Technology to Produce Dried Cheese Products

Chilean food processing company Lake Blue Spa will employ EnWave's Radiant Energy Vacuum (REV) dehydration technology to produce dried cheese products in the country.

The companies have signed a royalty-bearing commercial license agreement to this effect.

As per the agreed terms, Lake Blue will pay a 5% royalty to EnWave on the wholesale value of the dried cheese products they sell.

The REV machine is expected to become operational later this year.

EnWave claims that its REV is a new dehydration standard in the food and biological material sectors with better end product quality than air drying or spray drying.

Upon success of this project, Lake Blue plans to purchase a large commercial REV unit within the next 18 months.

Lake Blue also plans to use other REV-dried product opportunities, including dried fruit and vegetable products.

EnWave currently has three commercial REV platforms: nutraREV to dry food products quickly and at low-cost, while maintaining high levels of nutrition, taste, texture and colour; powderREV for the bulk dehydration of food cultures, probiotics and fine biochemicals such as enzymes below the freezing point; and quantaREV for continuous, high-volume low-temperature drying.
