Arla Foods Ingredients has introduced a protein solution which enables yogurt manufacturers to produce Greek-style yogurts on their existing plant with significantly reduced levels of wastage.
Arla noted that its new range of Nutrilac proteins enables dairy companies to enter into Greek yogurt category without investing in a new processing line, which can lower production costs.
Nutrilac proteins are designed to be used with Arla Foods Ingredients' 'Quick' process - a manufacturing process which eliminates the need for the whey separation step, which is used in producing traditional Greek yogurt.
The Quick process also ensures that nearly all the milk which is used in the manufacturing process is present in the final product, unlike in traditional Greek yogurt making process where two-thirds of the milk used is strained off as liquid whey.
Nutrilac protein solutions are available for a comprehensive range of Greek-style yogurt applications, including non-fat, low-fat, full-fat, long-life and drinking yogurt. The company said that all can be made with a protein content matching that of traditional Greek yogurts.
In addition, the company said that Arla Foods Ingredients can collaborate with manufacturers to boost protein levels in their Greek-style yogurts to 10% using its customised Nutrilac solutions and Quick process. This is higher than the 8% protein content offered by Greek yogurts.
Arla Foods Ingredients' Nutrilac proteins are developed from specially selected fractionated milk proteins, which means they are clean label and can be listed simply as 'milk protein' on-pack.
