DuPont Nutrition & Health has launched its range of mesophilic cultures for Tvarog, a curd based cheese, in order to accelerate its growth in the Eastern Europe.
Tvarog has a consistency in between cottage and fresh cheese. Addressing the consumer preference for traditional taste and texture for Tvarog, in both artisanal and industrial modern processing settings, can be a challenge for manufacturers.
DuPont Danisco ingredient portfolio has launched PROBAT 800 range, a part of the PROBAT series, which has been developed to offer consistency while making Tvarog. The range can also improve functionality and give cheese a mild lactic acid flavor.
DuPont noted that new range has been developed to help manufacturers create the perfect Tvarog the first time. Its optimized gas formation imparts the right consistency to the cheese, and its faster fermentation time provides creamy, rounded taste and a mild, lactic acid flavor.
Global product manager Annie Mornet said that by catering to the unique Eastern European market, the company will be able to attract a broader customer base by addressing the challenges faced by Tvarog manufacturers.
